I like to experiment a lot in the kitchen, which is fun; however, there is a list of items I usually cook each month that I find to be simple dinner options. All of these are quick and can be eaten for lunch as well. They are all customizable.
These are not complete recipes. When I make these, I usually measure by what feels right. Take what you like and leave what you don’t. The fun part about these recipes is the ability to mix and match to your liking.
Tuna Salad
I usually eat this for lunch with homemade focaccia and fruit on the side. This is a staple that everyone makes their own way.
This is my standard way:
- ¾ parts mayo
- ¼ part Greek yogurt
- Celery
- Red onion
- Dill pickle
- Seasonings: salt, pepper, Trader Joe’s 21 Salute (my all purpose seasoning)

Pasta
This can be anything from a simple Mac and cheese to standard chicken Alfredo. It can be something more tomato based or cold pasta salad. I always have some pasta on hand. It can be any shape or type.
Here is a list of staple ingredients to mix into your perfect sauce.
Tomatoes:
- Canned crushed tomatoes
- Tomato paste
- Sun dried tomatoes
Dairy (or the dairy free alternative you love):
- Half and half or heavy cream
- Parmesan
- Cheddar
Extras:
- Pesto
- Bone broth
- Lemon
- Herbs
- Seasonings and spices
Tacos
Staples I always have are ground turkey, tortillas, and shredded cheese. That’s the basis for tacos. I make my own seasoning combo, so I always have that as well. Sometimes I forgo the tortilla and have a taco salad.
Extras to top with:
- Lettuce
- Greek yogurt
- Salsa (any type)
- Guacamole
- Cheese
- Cilantro
- Anything you have on hand!
Whole Roasted Chicken
This is simpler than it may seem. It’s perfect to shred and make chicken salad or slice and eat it with a side of mash potatoes and roasted Brussels sprouts….yum! You can stick to simple ingredients with this or fancy it up by making it with barbecue or curry.
Go-to roasted chicken seasonings:
- Garlic
- Onion
- Lemon
- Salt
- Pepper
- Thyme

Meatballs
Another simple, go-to. These can be baked or sauteed. Use whichever protein is your favorite. I usually use ground turkey; however, I’ve dabbled with ground lamb and ground chicken before.
I love making meatballs with Asian-inspired flavors like ginger, garlic, soy sauce, etc. You could try barbecue or marinara flavored.
